When Day Zero loomed in 2018, the gardens that came through it were not the lush, thirsty ones. They were the gardens planted with species that belong here. Working across the Winelands since then, we plant almost everything now with that lesson front of mind, because water restrictions are not a once-off event in the Cape, they are a recurring season. This guide is the working plant list we use, with a full selection table, plus how to read your site, prepare the soil and get everything established.
Why water-wise is the default here, not a trend
Paarl sits in a winter rainfall zone, so plants have to sail through a long, hot, dry summer on very little. Indigenous and Mediterranean species evolved for exactly that, so once established they ask for a fraction of the water a traditional lawn and perennial border needs. They also shrug off our fast-draining, granite-based soils instead of sulking in them. The payoff is lower water bills, less maintenance, and food and habitat for the sunbirds, bees and butterflies that belong here.
Read the soil and the sun before you buy a thing
The most expensive gardens we get called to rescue are the ones planted without looking at the site first. Two checks change everything:
- 1Test the drainage. Dig a hole about 30cm deep, fill it with water, and see how fast it drains. Most Paarl gardens drain fast, which suits fynbos and succulents. If water sits for hours, you have clay and need to raise the beds or choose differently.
- 2Read the aspect. A north-facing bed bakes all afternoon and wants the toughest, sun-loving plants. A south-facing wall stays cool and shaded and suits clivia, plectranthus and ferns. Match the plant to the spot and it will thrive on rainfall alone within a year.

Hydrozoning: the technique that saves the most water
Hydrozoning means grouping plants with similar water needs together, then watering each zone to its own need. It saves more water than any other single decision. In practice, put the few thirsty plants in one bed near the house where you notice them, and let the tough stuff further out run lean. Water each zone on its own drip line and you never again overwater the hardy plants just to keep one thirsty corner alive.
A worked example
On a typical Paarl garden we run three zones: a high-water bed of veg and colour by the kitchen, a medium zone of agapanthus and lavender along the paths, and a low zone of proteas, restios and succulents at the boundary that gets a deep drink once a fortnight in summer and nothing in winter.
How to prepare the soil and plant
- 1Clear weeds and loosen compacted soil to a spade's depth.
- 2For most water-wise plants, dig in compost. For true fynbos, do the opposite and keep the soil poor and sharp with added sand, and never add manure or phosphorus.
- 3Plant in autumn, going into the rains, not in the teeth of summer.
- 4Water deeply but not often for the first summer, so roots chase the moisture down.
- 5Mulch every bed 50 to 75mm thick, because bare soil in Paarl bakes hard and wastes whatever you pour on it.
Thirsty plants to avoid, and aliens to remove
Some plants fight the climate and cost you water all summer. Where you want a water-wise garden, go easy on these:
- ✓Hydrangeas and azaleas in full sun, which wilt without constant water.
- ✓Thirsty bedding annuals replaced every season, which are a water and money drain.
- ✓Large sprawling lawns in areas nobody uses. Reduce them to the space you actually walk on.
- ✓Invasive aliens like pompom weed, and any bramble or wattle seedlings, which the law asks landowners to remove.

For reliable colour on little water we lean on succulents like aloes, spekboom and crassula, indigenous agapanthus, clivia and dietes, Mediterranean lavender and rosemary, and fynbos highlights such as proteas, pincushions, restios and ericas. The right mix depends on your soil and how much sun the bed gets.
Do indigenous plants really use less water?+
Once established, dramatically less. Indigenous and fynbos species evolved for the Cape's dry summers, so after their first year most survive on rainfall plus the occasional deep watering.

Autumn, going into the winter rains. Plants build their roots over the cool, wet months and are far tougher by the time their first summer arrives.
Is a water-wise garden low maintenance?+
Much lower than a traditional lawn and border, though not zero. Expect light pruning, occasional feeding and mulch top-ups. The watering and constant plant replacement, which is where most garden effort goes, drops sharply.
How do I plant proteas and fynbos successfully?+
Give them full sun, very sharp drainage and poor, acidic soil. Do not add manure, compost-rich mixes or phosphorus fertilisers, water at the base rather than overhead, and mulch. Most fynbos failures come from soil that is too rich or too wet.
What is hydrozoning?+
Grouping plants with similar water needs together and watering each group to its own need. It stops you overwatering tough plants just to keep a thirsty corner alive, and it is the single biggest water saver in a garden.
Which water-wise plants work in shade?+
Clivia, plectranthus, dietes and many ferns handle dry shade well. Clivia in particular is superb under trees, giving orange spring flowers with very little water.
Can I have a colourful garden that is still water-wise?+
Yes. Aloes and proteas flower in winter, agapanthus and plumbago in summer, and pincushions and gazanias add strong colour, all on low water. Layering species with different flowering times gives colour across the year.
